Ingredients
  • 2 Tbsp extra virgin olive oil
  • 8 cups bone broth
  • 4 stalks broccoli chopped
  • 4 stalks celery
  • 2 large handfuls kale
  • 2 handfuls spinach
  • 2/3 cup tahini
  • 2 tsp sea salt

Instructions
  1. Heat olive oil in a large pot. Add vegetable broth and bring to a boil.
  2. Once boiling, add broccoli. Cover and simmer for 10 minutes or until bright green.
  3. Add celery and kale, and cook for 4 minutes.
  4. Remove from heat. Add spinach, tahini, and sea salt, and stir.
  5. Let cool for at least 15 minutes, then transfer to a blender and blend until smooth.

    Forgive my ignorance…when you say 4 heads of broccoli, you mean 4 whole bunches, like you get at the store? Thanks!

    • no usually a bunch has 2-3 heads in it. perhaps ‘stalks’ is a better word?
