This is my favorite seasonal fall treat! Enjoy it spread on fruit, veggies, or rice crackers.

Ingredients
  • 6 apples, or a combination of apples and pears sliced
  • 1/2 cup pumpkin puree canned or fresh
  • 1/2 cup unsweetened milk substitute
  • 1/2 cup pecans or walnuts chopped
  • 1 Tbsp vanilla extract
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/8 tsp sea salt

Instructions
  1. Put the sliced apples in the crockpot.
  2. In a separate bowl, combine the pumpkin puree, milk substitute, nuts, vanilla, cinnamon, nutmeg and sea salt. Mix together and spread over the apples in the crockpot.
  3. Cook on high for 3 hours. Once it is done cooking, let cool for 20 minutes and blend in a food processor or blender so it becomes a smooth consistency.

    Have you all read the label on almond milk? It’s highly processed, full of additives, etc. Milk isn’t usually added to apple or pumpkin butter anyway…if you are doing gluten free…

      I agree about the almond milk, the coconut milk and any of the processed non-dairy “milks” – full of “non-desirables”. You can make your own coconut milk – recipe at tropicaltraditions.com, Misha

      Yes, I agree and I make my own almond milk with blanched almonds. I do not add it to my baked apple compote though.

    If you’re on the autoimmune protocol, neither butter, almond milk, pecans, walnuts or sea salt (if you have Hashimoto) would be advisable to use.

    I just tried it. It is so yummy. I have a Vitamix so I didn’t cook anything I just blended it. I did add Stevia since my apples were really sour. Thanks for a great recipe. Love that I can switch out the milk or add more or less spices.

    Can you eat eggs if they are cooked in a recipes such as meatloaf?

    • I wouldn’t recommend it if you are sensitive to eggs. Cooking them into a dish isn’t going to help.

      Thank you for you answer. I have read your book and will start the 30 plan in April. I do love eggs and that is why I am seeking clarification. If I am not sensitive to eggs, does your food plan allow them (after the month diet plan to decrease inflammation and assuming I am symptom free)? Thank you for your help.

      • Once you’ve eliminated them for 30 days and healed your gut, you can try adding them back in! If you don’t have a problem with them you can eat them.

    I’ve been on the Myers Way for 5 weeks. My brain fog is finally going away (week 4). I’m curious about adding nuts back in my diet. Is it ever possible?

    • Yes, some people are able to add nuts back into their diet after healing the gut
