When I made a trip to a local grocery store in Dallas, Texas, their delicious, dairy-free pesto sauce and cauliflower rice inspired me. Cauliflower rice is a fantastic alternative for those who are grain-free. I can’t tell you that it tastes like rice. However, cauliflower rice has excellent texture and takes on the taste of other vibrant and flavorful ingredients! It’s the perfect base for this dish and hosts a ton of nutritional benefits.
Cauliflower is an excellent source of antioxidants including vitamin C, manganese, beta-carotene, and quercetin, which help to decrease oxidative stress in our cells. These antioxidants also help to support phase one and two detoxification pathways. The fiber found in cauliflower also helps eliminate toxins from our body.

Sautéed Beef and Onion Cauliflower Rice with Dino Kale Pesto

Ingredients
Cauliflower Rice
- 5 cups 1200.00 ml cauliflower about 1 head
- 1 Tbsp 14.79 ml coconut oil
- 1/2 tsp 2.46 ml sea salt to taste
Sauteed Ground Beef and Onions
- 1 lb 454.00 g ground beef
- 1 white onion diced
- 3 cloves garlic minced
- 1 Tbsp 14.79 ml coconut oil
- ground black pepper to taste
- Tuscan Kale Pesto to taste
Instructions
- Break apart cauliflower into large florets and place in food processor.
- Process until cauliflower is completely broken down into rice-sized granules.
- Warm a tablespoon of coconut oil in a large skillet over low-medium heat.
- Place riced cauliflower into skillet, sprinkle with salt, and cook until tender.
- Warm a tablespoon of coconut oil in a large skillet over medium heat.
- In the skillet, add ground beef, garlic, black pepper, and onion.
- Cook until beef is crumbly and onions are tender.
- Add cauliflower rice and Dino Kale Pesto to the skillet. Mix thoroughly and serve warm.
