This is one of my favorite “go to” salads- easy to make and very nutritious! I normally cook chicken in bulk on the weekend and store it in my refrigerator so that I can use it throughout the week as an ingredient for salads and scrambles, such as this one.
Nutritional Benefits: Apple cider vinegar aids digestion, promoting cleansing and detoxification and also contains antimicrobial properties, helping to keep your immune system strong to fight off infection! Olives and extra virgin olive oil contain monounsaturated fatty acids which decrease inflammation and LDL (“bad”) cholesterol and raise HDL (“good”) cholesterol, promoting cardiovascular health.

Ingredients
- 1/4 cup 60.00 ml apple cider vinegar
- 2 Tbsp 29.57 ml extra virgin olive oil
- 1 tsp 4.93 ml oregano dried
- 1 cloves garlic diced
- 1/2 tsp 2.46 ml sea salt
- 1/2 tsp 2.46 ml ground black pepper ground
- 3 cups NaN ml romaine lettuce chopped
- 3 cups 720.00 ml spinach chopped
- 1 1/4 lb 567.50 g chicken cooked, chopped
- 1 cucumber chopped
- 2 red onion finely chopped into approximately 1/2 cup
- 1/2 cup 120.00 ml black olives canned in water or oil, sliced
Instructions
- In a large bowl, combine romaine, spinach, chicken, cucumber, red onion, and black olives.
- Whisk together apple cider vinegar, olive oil, oregano, garlic, salt and black pepper in a small bowl. Pour over salad and toss to coat evenly.
