I love brussels sprouts, and they pair well with just about any type of entrée!

This Roasted Brussels Sprouts recipe is an upgraded, more flavorful version of your standard roasted brussels sprouts. Tossing them in a little mustard and sliced bacon give the dish a new, rich flavor that will satisfy your taste buds. Best of all, these roasted veggies will support your thyroid and overall health!

Ingredients
  • 1 lb brussels sprouts sliced in half
  • 4 slices nitrate-free bacon diced
  • 1 1/2 tbsp olive oil
  • 1 1/2 tbsp dijon mustard try one made with apple cider vinegar, like Eden Organic Brown Mustard
  • 2 tsp honey optional. Leave out for AIP!
  • 2 cloves garlic minced
  • 1/2 tsp black pepper

Instructions
  1. Preheat oven to 425 F.
  2. Combine olive oil, mustard, honey, garlic, and black pepper. In a bowl, combine Brussels sprouts, bacon, and dressing mixture.
  3. Place mixture on a sheet pan and cook for 30 minutes or until roasted to desired amount.
