Ingredients
Pork
  • 1 lb pork tenderloin sliced into 1 inch rounds
  • 1-2 pears cored and sliced
  • 2 shallots peeled and chopped
  • 1 tbsp avocado oil
Pesto
  • 2 cloves garlic
  • 1 cup fresh sage
  • 1 cup fresh parsley
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions
  1. Preheat oven to 400 degrees F. Heat avocado oil in skillet on stove at medium-high heat. Sear pork rounds for 4 minutes on each side or until browned.
  2. Place pork rounds at bottom of a glass baking dish. Top with sliced pear and shallots. Roast for 8-10 minutes or until cooked through (130 degrees F). Cooking time may vary based on ripeness of pears and thickness of pork.
  3. While pork cooks, put all pesto ingredients into a high speed blender or food processor and pulse to desired consistency.
  4. Remove pork from oven. Plate pork and top with pesto.
