Chopped salad is a go-to lunch option for me. It’s a great way to clean out the fridge and keep produce from going to waste!

Ingredients

  • 1 head romaine lettuce chopped
  • 2 cups baby kale chopped
  • 1 cucumber chopped
  • 1 stalk celery chopped
  • 1 cup chickpeas cooked (avoid on Paleo Protocol)
  • 2 chicken breasts cooked and chopped
  • 1 apple sliced
  • 1 large avocado sliced
  • 1/2 cup walnuts
  • 1/3 cup cashews soaked in water overnight
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice
  • 1 clove garlic
  • 1/4 tsp sea salt
  • 1/8 tsp ground black pepper

Instructions

  1. Toss lettuce, kale, cucumber, celery, chickpeas, chicken, apple, walnuts, and avocado in a medium-sized bowl. 
  2. Place cashews, oil, lemon juice, garlic, and seasoning in a food processor or blender and mix until smooth.
  3. Drizzle salad with dressing and serve.
