Butternut Squash with Kale and Pine Nuts
This Butternut Squash with Kale and Pine Nuts combines nutrient-dense kale with the creaminess of butternut squash and pine nuts. Gluten-free. Paleo. Delicious!

Butternut Squash with Kale and Pine Nuts
Ingredients
- 1 bunch kale
- 1 large yellow onion diced
- 3.5 cups butternut squash cubed (can use frozen cubes)
- 1 apple sliced
- 1 Tbsp extra virgin olive oil
- salt to taste
- 1/4 cup pine nuts
Instructions
- Wash and tear kale leaves.
- Heat large pan with olive oil. Sauté onions for about 3 minutes.
- Add sliced apple and squash. Cook until squash is soft. Add water as necessary.
- Add kale and cook for another 2-3 minutes.
- Season with salt to taste. Garnish with pine nuts.
