Ingredients

  • 6-8 cups arugula or other mixed greens
  • 1 large pear sliced thinly
  • 1 large mango sliced thinly
  • 1/4-1/2 cup walnuts
  • 2 Tbsp lemon juice
  • 2 tsp lemon zest
  • 2 Tbsp extra virgin olive oil
  • sea salt to taste
  • ground black pepper to taste

Instructions

  1. Arrange greens on serving plate or bowl. 
  2. Scatter pear and mango slices on top. Add walnuts.
  3. In a small bowl whisk together lemon juice, lemon zest, oil, salt, and pepper. Drizzle over salad and serve.
