Blueberry Coconut Porridge

This warm Blueberry Coconut Porridge is easy to prepare and makes enough breakfast to last you a whole week.


Coconut Blueberry Porridge


  • 1 cup short grain brown rice
  • 5 cups water
  • 1 cup fresh or frozen blueberries
  • 1/4 cup unsweetened shredded coconut
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 Tbsp chia or ground flax seeds
  • 1 pinch sea salt




  1. Combine all ingredients in a slow cooker, and cook on low for about 8 hours.
