Crispy Baked Organic Chicken Legs
A friend gave me a similar recipe for Paleo breaded chicken thighs. I did some experimenting and took out the butter and egg for all of us on The Myers Way®. These Crispy Baked Organic Chicken Legs were a hit!
Enjoy with Cilantro Cauliflower Rice or Mashed Parsnips with Sea Salt and Sage.
Crispy Baked Organic Chicken Legs
Ingredients
- 1 1/2 lbs chicken legs and thighs bone-in, skin on (about 5 legs)
- 3/4 cup unsweetened coconut milk
- 1/2 cup coconut flour
- 1 Tbsp garlic powder
- 1 tsp onion powder
- 1 tsp ground thyme
- 1/4 tsp cinnamon
- 1/2 tsp sea salt
- 1/2 tsp ground black pepper
- coconut oil for greasing

Instructions
- Preheat oven to 375 degrees F.
- Place chicken thighs in glass dish and drizzle with coconut milk. Turn chicken to coat entirely with coconut milk and let sit.
- In a medium sized bowl, mix coconut flour, garlic powder, onion powder, thyme, cinnamon, pepper, and salt.
- Grease large rimmed baking dish with coconut oil. Dip chicken in flour mixture to coat both sides and place on greased baking dish.
- Bake for about 45-50 minutes until chicken is cooked through.
