Spiced Cabbage and Kale with Sweet Onions

Ingredients
- 1 Tbsp 14.79 ml coconut oil plus more as needed
- 1 sweet onion chopped
- 4 cups 960.00 ml green cabbage about 1/2 head, sliced
- 1/8 tsp 0.62 ml turmeric
- 1/4 tsp 1.23 ml ginger powder
- 1/8 tsp 0.62 ml garlic powder
- 1/4 tsp 1.23 ml cinnamon
- 1/8 tsp 0.62 ml nutmeg
- 1/8 tsp 0.62 ml cumin
- 1/4 tsp 1.23 ml sea salt
- 1/8 tsp 0.62 ml ground black pepper
- 2 cups 480.00 ml kale chopped
Instructions
- Heat coconut oil in large pan over medium heat. Add onion and let cook for about 3 minutes.
- Add cabbage and stir occasionally. After the cabbage starts to soften, about 3-5 minutes, add turmeric, ginger powder, garlic powder, cinnamon, nutmeg, cumin, sea salt, and ground pepper. Mix well to incorporate spices. Let cook until onions and cabbage are very tender. Add more oil if veggies start to dry out.
- Add kale and cook for another 2 minutes to let soften before serving.
