This Belgian Endive and Pear Salad is crisp and delicious, with a hint of sweet! Leave out the mixed nuts if you are following the autoimmune protocol.

Ingredients

  • Salad
  • 4 cups endive torn or chopped roughly
  • 1 pear sliced thinly (reserve some slices for garnish)
  • 1 avocado diced
  • 1 shallot sliced thinly
  • 1/2 cup roasted beets julienned
  • 1/4 cup mixed nuts
  • Dressing
  • juice from 1 lemon
  • zest from 1/2 lemon
  • 1 clove garlic minced
  • 1 tsp ginger minced
  • 2 Tbsp extra virgin olive oil

Instructions

  1. Mix together endive, pear, avocado, and shal­lot in a large bowl.
  2. In a smaller bowl combine dressing ingredi­ents and whisk together.
  3. Add desired amount of dressing to mixed salad. Top with reserved pear slices, beets, and mixed nuts.
