Ginger Coconut Summer Salad with Organic Chicken

Ingredients

  • 6-8 cups mixed greens thinly sliced
  • 1 cooked chicken breast thinly sliced
  • 1/2 mango thinly sliced
  • 1/4 red onion thinly sliced
  • 1/2 inch ginger root peeled and minced
  • 1 Tbsp unsweetened coconut flakes
  • 2 Tbsp lemon juice
  • 2 tsp lemon zest
  • 2 Tbsp extra virgin olive oil
  • 1 pinch sea salt
  • 1 pinch ground black pepper

Instructions

  1. Arrange greens on serving plate or bowl. Scatter chicken, mango and onion slices on top.
  2. In a small bowl whisk together ginger, coconut flakes, lemon juice, lemon zest, oil, salt and pepper. Drizzle over salad and serve.
