Organic Oven-Roasted Whole Carrots
Are you tired of peeling vegetables, especially those skinny little carrots? This recipe for Oven-Roasted Whole Carrots is the result of some of my time-saving tricks, and it’s a hit!
Organic Oven-Roasted Whole Carrots
Ingredients
- 16 carrots
- 1-2 Tbsp animal fat or coconut oil
- 1/4 tsp sea salt
- cinnamon (optional, to taste)

Instructions
- Preheat oven to 375 degrees F.
- Scrub carrots with water and a vegetable scrubber.
- Place carrots in a large oven-safe glass dish. Drizzle with olive oil to coat all carrots. Sprinkle with salt.
- Roast carrots for 45-60 minutes until soft and golden. Option to sprinkle with cinnamon before serving.
