No Bake Pumpkin Pie Fudge

This delicious treat, sweetened only with ripe bananas, would be perfect to take as a healthy and protocol-friendly dessert to a party or gathering this holiday season.

Pumpkin is rich in the antioxidant beta-carotene which is protective against certain cancers, asthma and heart disease. One cup of pumpkin contains more than 200% of your recommended daily intake of vitamin A which is essential for good vision. Pumpkin also contains fiber which will help to keep you fuller for longer – meaning that you may eat less at that holiday meal or gathering and can avoid winter weight gain.

 

No Bake Pumpkin Pie Fudge

Ingredients

  • 15 ounces canned pumpkin
  • 1 cup coconut flour
  • 4 ripe bananas
  • 1 tsp cinnamon
  • 1/2 tsp ginger powder
  • 1/2 tsp nutmeg
  • 1/2 tsp sea salt

Instructions

  1. In a bowl, thoroughly mash ripe bananas until consistency is clump-free.
  2. In a large bowl, add coconut flour, spices, salt, and mashed bananas. Mix well.
  3. Add a can of pumpkin to the large bowl and mix until all ingredients are thoroughly combined.
  4. Transfer the mixture into a thin dish.
  5. Refrigerate for at least 30 minutes, until firm.
