Brussels Sprout Buffalo with Sweet Potato Mash

Ingredients
- 2 lbs 908.00 g brussels sprouts washed and sliced, stems discarded
- 1 Tbsp 14.79 ml extra virgin olive oil
- sea salt to taste
- 1 Tbsp 14.79 ml lemon juice
- 1/2 pound 227.00 g ground bison
- 1 sweet potato
- 1 Tbsp 14.79 ml coconut oil
Instructions
- Heat olive oil in a medium-sized pan and sauté brussels sprouts until lightly browned.
- Add salt to taste and lemon juice. Set aside in glass dish.
- In the same pan, cook buffalo until browned all the way through.
- Bake sweet potato. Slice and mash with coconut oil.
- Mix Brussels sprouts and cooked buffalo together. Top with sweet potato mash and enjoy!
