This Carrot Mango Salad is great for dinner parties. The bright carrots and mango bring beautiful color to accompany those organic greens!
Carrot Mango Salad with Walnuts and Apple Cider Vinaigrette
Ingredients
- 8 cups spring greens mix
- 1 cup carrots shredded or finely chopped
- 3/4 cup walnuts chopped
- 1 avocado chopped
- 1 mango chopped
- 1 Tbsp apple cider vinegar
- 3 Tbsp extra virgin olive oil
- 1/4 tsp sea salt
- 1/4 tsp ground black pepper
Instructions
- Combine greens, carrots, walnuts, avocado, and mango together in large salad bowl.
- Drizzle with apple cider vinegar and olive oil. Sprinkle with salt and pepper, then toss ingredients well.
The Carrot Mango Salad with Walnuts has nuts. I thought all nuts were to be avoided in the Autoimmune Solution diet. I’ve also noticed recipes calling for almond milk. Is this acceptable?

I saw a recipe on her site which also included chia seeds, which I thought we were supposed to avoid…at least till gut healing has occurred. Hopefully as time goes on, we will receive some help with these questions.
I’d absolutely love to get the answers everyone else has asked about seeds, nuts, almond milk, etc. I see them on here as well. If we can’t have them during the first 30 days, are they some of the foods we can add back in after?
