Place pineapple cubes in the bottom of your slow-cooker.
In a small bowl mix ginger, garlic, sea salt, and ground black pepper together.
Sprinkle spices on all sides of chicken.
Place seasoned chicken on top of pineapple in the slow-cooker and cook on low for 3 ½-4 hours until cooked all the way through. If you have a meat thermometer, cook until the thickest part of the chicken breast reaches 165 degrees F.

Oh My Goodness! My mouth is already watering! I am definitely giving this a try with my husband. He decided to join me with healthy eating and active lifestyle (the best gift he could give me!). His first day is February 1st, which shocked me, because it’s Super Bowl Sunday. Usually, he drinks beer and requests his normal Super Bowl meal (homecooked macaroni, baked beans, peach muffins, and pork chops). As you can imagine, it is definitely not healthy (delicious…but not healthy!). So this Super Bowl I’m definitely going to give this a try!
This does look really tasty. I almost bought a pineapple yesterday but realized it was from Costa Rica and those are GMO so be sure to look for those that use the 5 digit code beginning with a 9 for organic, or a 4 digit beginning witha 4 for conventional, but a 5 digit beginning with an “8” is grown Genetically Modified. Costco’s pineapples are GMO.

I bought a pineapple from Costco that was grown in Guatemala with the first digit of 5 beginning with a 4. So apparently some ARE safe from Costco.
