We love greens on The Myers Way®! This Dinosaur Kale with Arugula and Nitrate-Free Bacon would be delicious for Sunday brunch or as a side to your evening meal.

Organic Dinosaur Kale with Arugula and Nitrate-free Bacon

Ingredients

  • 6 slices nitrate-free bacon
  • 1 sweet onion thinly sliced
  • 1/4 tsp sea salt
  • 5 stalks dinosaur kale thinly chopped
  • 4 cups arugula
  • 1/4 tsp ginger powder

Instructions

  1. Cook bacon on stovetop or in oven until crispy.
  2. Pour about a tablespoon of bacon grease into a separate large pan. Heat pan over medium heat.
  3. Add onion and sea salt, then sauté for about 3 minutes.
  4. Add kale, arugula and ginger powder. Stir and sauté until greens are wilted.
  5. Crumble bacon on top of cooked greens. Mix and serve hot.
