Enjoying icy summer drinks is the perfect way to beat the heat at backyard BBQs! There are so many delicious recipes that play on the flavors of the season; spiced ginger and tangy lemon, sweet watermelon and juicy grapefruit, zesty lime and herbaceous mint! Here are some of my favorites…

Turmeric Ginger Iced Tea and Lemon Spritzer

Ingredients

Turmeric Ginger Iced Tea

  • 3 quarts water, filtered
  • 4 inches ginger root
  • 4 inches turmeric root

Lemon Spritzer

  • 6 cups Turmeric Ginger Iced Tea
  • 6 cups sparkling water or soda water 
  • 1/3 cups lemon juice
  • 1/4 cups honey (omit if following a Candida diet or SIBO diet)
  • lemon wedge for garnish (optional) 
  • basil leaves for garnish (optional)

Instructions

Turmeric Ginger Iced Tea

  1. Add water, peeled ginger root, and peeled turmeric root to a large stockpot and bring to a boil over high heat. Reduce heat to low, and simmer for about 40 minutes, stirring occasionally until the liquid is reduced to about 64 ounces, and is a light golden color.
  2. Remove from heat. Using a wire mesh strainer, strain water into a 2-quart glass jar with a lid, and refrigerate at least 4 hours to chill.
  3. For a single serving of unsweetened Turmeric Ginger Iced Tea, pour 12 ounces over a pint glass filled with ice.
  4. Garnish with a lemon slice and fresh basil if desired.
  5. Store covered in the fridge for up to a week.

Lemon Spritzer

  1. For the Lemon Spritzer option, combine lemon juice, honey, and Turmeric Ginger Tea in a blender carafe or a large pitcher.
  2. Use a blender or hand mixer to combine.
  3. Pour into a pitcher, add soda water, and serve over ice.
  4. Garnish with a lemon slice and fresh basil if desired.

Watermelon Mint Sparkler

Summer is a great time to kick back and relax in the shade with a cool drink! It’s a time for BBQs, picnics, and lazy days at the beach or pool. While this year, your get-togethers will likely be scaled-back family affairs, that’s all the more reason to make them special.

This AIP-friendly beverage drops the sugar or corn syrup and food coloring of the punches that are so common at this time of year. Instead, it substitutes zippy lime and mint to amp up the flavor. You’re going to want to celebrate with Watermelon Mint Sparklers all summer long!

Ingredients

  • 3 cups watermelon, diced
  • 2 lime, juiced
  • 1 1/2 tsp coconut sugar (optional) 
  • 18 mint leaves
  • 1 cup sparkling water

Instructions

  1. In a blender, combine watermelon, lime juice, and coconut sugar, if using.
  2. Muddle mint leaves into the bottom of each glass. Evenly pour watermelon mixture into each glass. Add ice and top with sparkling water. Stir to combine.

Grapefruit Mojito

There are times when I need a refreshing drink that will quench my thirst and support my body. That’s when I turn to this Grapefruit Mojito. Unlike the mojito your friends may be drinking, with rum, sugar, and soda water, this AIP-friendly version of the drink is free of added sugars and alcohol. That gives you the chance to enjoy the benefits of this drink’s ingredients!

Ingredients

  • 8 mint leaves, torn apart
  • 1 lime cut into quarters
  • 16 ice cubes
  • 4 grapefruits, juiced
  • 2 cups sparkling water such as Topo Chico or Pellegrino

Instructions

  1. Divide mint among glasses. Squeeze ¼ of lime into bottom of glass. Muddle with a spatula.
  2. Divide ice among glasses. Evenly divide grapefruit juice into each glass. Top off with sparkling water of choice. Stir together and enjoy!
