Ingredients
- 1 sweet potato
- 1 Tbsp 14.79 ml coconut oil
- 2 cups 480.00 ml spinach or kale
- 1 apple diced
- 1 tsp 4.93 ml ground cinnamon
- 1/4 cup 60.00 ml walnuts or pecans
- sea salt to taste
Instructions
- Place chopped sweet potato in high-powered blender and blend on low or medium for about 10 seconds, until potato is in small chunks. If you don't have a blender, dice sweet potato into small bite-size chunks.
- Heat coconut or olive oil over medium heat, and add sweet potatoes. Cook for one minute.
- Add diced apple and cinnamon.
- Add spinach or kale and allow greens to cook down.
- Add crushed walnuts, pecans, or another nut of choice. Salt to taste.
- Serve warm with organic eggs, chicken, sausage, nitrate-free bacon, or another source of protein.
