Ingredients
- 1 head romaine lettuce chopped
- 2 cups 480.00 ml kale chopped
- 1 cucumber chopped
- 1 stalks celery chopped
- 1 cup 240.00 ml chickpeas cooked (avoid on Paleo Protocol)
- 2 chicken breast cooked and chopped
- 1 apple sliced
- 1 avocado sliced
- 1/2 cup 120.00 ml walnuts
- 1/3 cup 80.00 ml cashews soaked in water overnight
- 2 Tbsp 29.57 ml extra virgin olive oil
- 1 Tbsp 14.79 ml lemon juice
- 1 cloves garlic
- 1/4 tsp 1.23 ml sea salt
- 1/8 tsp 0.62 ml ground black pepper
Instructions
- Toss lettuce, kale, cucumber, celery, chickpeas, chicken, apple, walnuts, and avocado in a medium-sized bowl.
- Place cashews, oil, lemon juice, garlic, and seasoning in a food processor or blender and mix until smooth.
- Drizzle salad with dressing and serve.
