  • 1 1 bunch kale
  • 1 yellow onion diced
  • 3.5 840 cups mL butternut squash cubed (can use frozen cubes)
  • 1 apple sliced
  • 1 14.787 tbsp mL extra virgin olive oil
  • sea salt to taste
  • 1/4 60 cups mL pine nuts

Instructions

Instructions

  1. Wash and tear kale leaves. 
  2. Heat large pan with olive oil. Sauté onions for about 3 minutes.
  3. Add sliced apple and squash. Cook until squash is soft. Add water as necessary. 
  4. Add kale and cook for another 2-3 minutes. 
  5. Season with salt to taste. Garnish with pine nuts.
