AIP Breakfast Tacos

Ever since I moved to Austin, breakfast tacos have been one of my favorite indulgences. I believe they belong on the menu for breakfast, lunch, and dinner. If you’re looking for a great way to start your day, these AIP-friendly breakfast tacos are for you. 

There are so many delicious possibilities for breakfast tacos. This recipe takes fresh, wholesome ingredients such as crispy, nitrate-free bacon, fresh avocado, jicama, and a splash of lime and rolls them all up in a fiber-rich cassava flour tortilla. 

The best part about this dish is that you can add your favorite ingredients such as Nightshade Free Pico De Gallo or Mango Avocado Salsa and enjoy taco time your way! 

Nitrate-Free Bacon

The star protein in this dish is crispy, nitrate-free bacon. While nitrates are useful for preserving and improving the color of food, they can react with your stomach acid to form nitrosamines, some of which are carcinogenic and have been linked to bowel cancer. 

Nitrate-free bacon is often cured with a form of celery, which contains natural nitrites and high levels of vitamin C. 

Cassava Tortillas

Cassava flour tortillas are a great gluten- and corn-free option for delicious breakfast tacos. Cassava flour is high in resistant starch, which has the same health benefits of fiber to keep you full and satisfied. Resistant starch is also a prebiotic, which helps feed the “good” bacteria in the gut and reduce inflammation. 


Jicama is a Mexican tuber that’s crunchy, light, and low in calories. Many people describe the taste as a combination between a potato and an apple. It’s rich in prebiotic fiber, vitamin C, and amino acids, and is great for your digestion, blood sugar levels, and immune system.

In this recipe, you can enjoy jicama raw for a nutrient-rich crunch. Simply sprinkle the fresh jicama onto your tortilla, add avocado and nitrate-free bacon, top with lime juice, and roll for a delicious and dynamic breakfast that’s sure to fill you up and energize you to start your day.

AIP Breakfast Tacos

  • 2 cassava flour tortillas
  • 1 avocado
  • 4 slices nitrate-free bacon
  • 1 Tbsp lime juice
  • 1/2 cup jicama diced


  1. Warm tortilla in dry pan until just warmed but not crispy.
  2. Add ½ avocado to each tortilla, then top with lime juice, bacon, and the fresh jicama. Roll up and eat like a taco.
