Roasted carrots is one of the most versatile side dishes, and these roasted carrots got an upgrade with a tasty honey lemon glaze that makes them absolutely irresistible! These AIP Honey Lemon Roasted Carrots are very easy to prepare and have just a few ingredients. It’s a great AIP side dish that can be served with your favorite protein for a delicious meal.

Healthy AIP side dish

Carrots are a very healthy vegetable full of nutrients that nourish the body. It is high in soluble and insoluble fiber, which help promote digestion and keep us regular, all while impairing absorption of cholesterol in the body and lowering our blood cholesterol.

Carrots are also high in beta-carotene, an antioxidant that converts to Vitamin A in the body. Beta-carotene helps keep our vision healthy and is important for the immune system. Carrots also contain biotin, which is a B vitamin that helps with the digestion of protein and fat. They contain Vitamin K1, which is important for bone health and blood clotting, as well as potassium, which is important for blood pressure control.

I season the carrots in sea salt, freshly minced garlic, ground pepper, and onion powder before roasting. This gives the carrots a savory base that pairs well with the honey lemon glaze.

Honey lemon glazed carrots

The honey lemon glaze for these carrots consists of 1 tablespoon lemon juice and 2 tablespoons honey mixed together. This is the perfect combination to add a little sweetness and tang to the carrots without overpowering them. 

Honey is a natural sweetener that is a delicious AIP-compliant alternative to processed and refined sugars. Not only does it make a wonderful glaze for the carrots, it also contains vitamins, minerals, zinc, iron, and antioxidants, which help protect the body against oxidative damage. Honey also has anti-inflammatory and antibacterial properties.

Freshly squeezed lemon juice is high in Vitamin C, which is good for our immune system.

I add the honey and lemon mixture to the carrots halfway through roasting because the natural sugars in honey can burn in the oven and stick to the pan. Adding the honey 20 minutes into roasting the carrots allows the carrots to roast and soften a little, and then roast with the honey lemon mixture.

What to serve with honey lemon glazed carrots

Since the carrots have a little bit of a sweet flavor, they go really well with pork, chicken, and maple-glazed seafood. We love these carrots as a side dish for AIP BBQ Ribs or Honey Glazed Baked Ham. If you want to try seafood, the carrots go well with Maple Dijon Salmon.

  • 2 29.574 tbsp ml olive oil
  • 2 2 cloves garlic finely grated
  • 1/4 1.23225 tsp ml sea salt
  • 1/4 1.23225 tsp ml onion powder
  • 1/4 1.23225 tsp ml ground black pepper
  • 2 29.574 tbsp ml honey
  • 1 14.787 tbsp ml lemon juice 1/2 lemon
  • 1 4.929 tsp ml parsley leaves finely minced for garnish

  1. Preheat oven to 375 degrees Fahrenheit.
  2. If your carrots are bigger than ¾ inch thick, slice them in half lengthwise.
  3. Place the carrots on a roasting pan and drizzle with olive oil. Season with the minced garlic, sea salt, onion powder, and black pepper. Use your hands to distribute the olive oil and seasonings all over the carrots.
  4. Roast at 375 degrees Fahrenheit for 20 minutes. Meanwhile, combine the lemon juice and honey in a small bowl and mix well.
  5. After 20 minutes of roasting, drizzle half of the honey lemon mixture on the carrots. Roast for 10 minutes and add the rest of the honey lemon mixture, using a basting brush to brush the glaze over the carrots. Roast for another 10 minutes, or until the carrots are cooked to your liking. Sprinkle with minced parsley and serve warm.
