Blackberry Collagen Popsicles

These Blackberry Collagen Popsicles are the ultimate healthy summer treat! They’re loaded with antioxidant-rich blackberries, creamy coconut milk, and protein-rich collagen. They’re incredibly easy to make and are a must-have for keeping in the freezer for healthy summer snacking. These blackberry popsicles are AIP- and Paleo-friendly and made without refined sugar.

Healthy blackberry popsicles

The main ingredient in these popsicles is blackberries, which are tasty berries loaded with vitamins and antioxidants. Blackberries are loaded with Vitamin C, which is essential for keeping our immune system healthy. They’re also high in fiber, which helps keep our digestive tract healthy and helps us feel full and satisfied. In addition to that, they contain Vitamin K, which is important for blood clotting, as well as manganese, which helps with metabolism. 

Blackberries are also high antioxidants, which may help protect our bodies against cancer, slow down aging, and reduce inflammation.

For this popsicle recipe you can use fresh or frozen blackberries. Fresh blackberries are easier to blend smoothly, but using frozen blackberries is a great option that is budget-friendly and perfect for when blackberries are not in season.

I add a little lemon juice (or lime juice) to bring a fresh flavor to these popsicles and add even more Vitamin C, thanks to the citrus. I also add honey to the popsicles to add some natural sweetener, but that is not necessary if you like a more tart popsicle. You can also use a ripe banana instead of honey to sweeten these popsicles especially if you are following my Candida or SIBO Breakthrough Programs or The Myers Way® lifestyle.

Healthy collagen popsicles

I add collagen peptides to these popsicles to add protein to this healthy summer treat. The collagen peptides dissolve in the blackberry mixture and do not add any flavor to the popsicles, but they add so much nutrition and health benefits! 

Collagen has multiple health benefits: it helps repair leaky gut and reduce inflammation, it helps keep our healthy hair, skin, nails, and joints healthy, it supports bone formation, growth, and repair, and it can even benefit our heart health and support weight management.

Adding collagen to our every-day recipes, such as popsicles or smoothies is a great way to add this healthy supplement to our diet daily and get all its health benefits.

Coconut milk

I add coconut milk to these popsicles to make them a little more creamy. Coconut milk is a great dairy-free ingredient for ice cream and popsicles, and it adds its own health benefits too. Coconut milk is high in electrolytes, such as potassium, magnesium, and phosphorus. These electrolytes help maintain normal muscle, nerve, and heart function. Coconut milk is also high in iron, which helps keep the blood cells healthy and prevent anemia. 

I use full-fat organic canned coconut milk for these popsicles because I like the creaminess that full-fat coconut milk adds to the popsicles. You can use lite coconut milk or even sugar-free coconut milk yogurt for these popsicles as well.

How to make popsicles

Popsicles are very easy to make! Simply blend all the ingredients in a blender and process until smooth. Since blackberries contain seeds, I like to strain the seeds through a fine mesh colander so that the popsicles have a smooth feel. You can choose to leave the seeds in if you prefer a little crunch.

Pour the blackberry mixture into popsicle molds and freeze until solid.

These popsicles are great to have in the freezer so that you can grab a healthy snack anytime you’re craving a sweet treat!

Blackberry Collagen Popsicles

Prep Time

Ingredients

  • 12 ounces blackberries about 3 cups frozen
  • 3/4 cup coconut milk
  • 2 tbsp The Myers Way® Collagen Protein
  • 2 tbsp honey *avoid if following The Myers Way® or AIP diet
  • 2 tsp lemon juice or lime juice

Instructions

  1. Add all the ingredients to a blender and blend for 30 seconds - 1 minute, or until smooth.

  2. If you want to remove the blackberry seeds for smoother popsicles, pour the blackberry mixture through a fine-mesh colander to strain out the seeds, using a spoon to help push the liquid mixture through.
  3. Pour the blackberry mixture into popsicle molds using a funnel, and freeze for at least 2 hours, or until frozen solid.
