AIP Blueberry Kale Protein Smoothie

This Blueberry Kale Protein Smoothie is packed with healthy, nutritious ingredients and is a great way to start the day! The smoothie tastes like blueberries but has hidden kale in it. It is made with an AIP-friendly protein powder to keep us feeling full and satiated, and is naturally sweetened with bananas. I love grabbing this smoothie or a breakfast on the go, and sometimes as an afternoon snack. I hope you will enjoy it as much as I do!This smoothie is AIP- and paleo-friendly.

Healthy smoothie ingredients

This smoothie is one of my favorites because every single ingredient has amazing health benefits. 

Blueberries are an antioxidant-rich berry that protects the body from oxidative damage and may help reduce the risk of cancer. They may also help lower blood pressure, reduce bad cholesterol in the body, lower the risk of diabetes, and prevent heart disease. You can use fresh or frozen blueberries for this smoothie. If using fresh blueberries, I recommend adding 1 cup of ice to the smoothie. 

Kale is considered a “superfood” and contains Vitamin A, which is important for the immune system and for bone health and eye health, Vitamin C, which is important for preventing diseases and colds, and Vitamin K, which is needed for healthy blood clotting. Kale can be tough to eat raw on its own, but blending it into a smoothie completely hides its texture while still giving you all the benefits! 

Banana adds natural sweetness to the smoothie and contains a lot of fiber, which keeps our digestive system healthy. In addition, it contains a lot of Vitamin B6, which helps metabolize amino acids, carbohydrates, and fats to produce energy for our bodies, and also helps maintain a healthy nervous system.

Coconut milk makes the smoothie nice and creamy while adding electrolytes and iron to this smoothie. Electrolytes help regulate fluids in the body, and iron is important for preventing anemia.

Collagen peptides are my favorite protein powder to add to smoothies and other recipes. The powder is completely flavorless and dissolves easily, which means you will never know it is there and you can add it to any drink and to most dessert recipes.   • 2 cups frozen blueberries Add 1 cup of ice to blender If using fresh blueberries
  • 2 cups kale
  • 1 banana
  • 1 cup unsweetened milk substitute
  • 2 tbsp The Myers Way® Collagen Protein

Instructions

  1. Add all the ingredients to a blender and process until smooth. Serve immediately.
