Brussels Sprout Buffalo with Sweet Potato Mash


  • 4 cups brussels sprouts washed and sliced, stems discarded
  • 1 Tbsp extra virgin olive oil
  • sea salt to taste
  • 1 Tbsp fresh lemon juice
  • 1/2 pound ground bison
  • 1 large sweet potato
  • 1 Tbsp coconut oil




  1. Heat olive oil in a medium-sized pan and sauté brussels sprouts until lightly browned. 
  2. Add salt to taste and lemon juice. Set aside in glass dish. 
  3. In the same pan, cook buffalo until browned all the way through.
  4. Bake sweet potato.  Slice and mash with coconut oil.
  5. Mix Brussels sprouts and cooked buffalo together. Top with sweet potato mash and enjoy!
