As you know, I was a panelist at Paleo Fx again this year. It was even more amazing than last year!

Since I was busy with Paleo Fx, Juice Friday Y’all and Smoothie Saturday posts didn’t happen this week. For that reason I am giving you a combined Juice-Smoothie (and honestly, it is the BEST one I have ever made!).

I also wanted to honor an Easter theme and use carrots. I have called this one the “Carrot Cake Smoothie.” Enjoy, and Happy Easter!

  • 10 carrot
  • 1 gala apple
  • 1 2.54 inch cm ginger root
  • 1 1 handful walnuts
  • 1 1 handful pecans
  • 1 14.787 tbsp mL chia seeds
  • 1 14.787 tbsp mL flax seeds
  • 1 4.929 tsp mL cinnamon
  • 1 14.787 tbsp mL coconut oil
  • 10 ice
  • almonds toasted

Instructions

  1. Juice the carrots, apple, and fresh ginger root.
  2. Pour the juice into a blender, and add remaining ingredients.
  3. Blend on high until smooth. Top with toasted almonds. Enjoy!
