Too often we get stuck in the rut of eating sweet potatoes with every meal while following an Autoimmune Paleo diet. As great as sweet potatoes are, I don’t want you getting sick of them! If you are looking for a little bit of a change, carrots can be another great way to get some vitamin A!
Though we normally think of carrots as being great for our eyesight (and they are!), they also can provide lots of cardiovascular benefits. And, due to their antioxidants, they have cancer-fighting properties! Try these Carrot Fries for a different option as a side to your protein!
Carrot Fries

Ingredients
- 10 carrot washed and peeled
- 1 tbsp 14.79 ml Avocado oil
- 1/2 tsp 2.46 ml garlic powder
- 1/2 tsp 2.46 ml turmeric
- ground black pepper to taste
- sea salt to taste
Instructions
- Preheat oven to 425 degrees F. Slice carrots into fry shaped rectangles or preferred thickness.
- Toss carrots in avocado oil. Place on parchment lined sheet pan. Season with garlic powder, turmeric, salt, and pepper.
- Roast carrots in oven for 30 minutes, tossing halfway through. For an extra crunch, turn on broiler and broil carrots for 2-3 minutes. Keep an eye on them. Remove from oven and enjoy!
