Sautéed Ground Beef and Onion Cauliflower Rice with Dino Kale Pesto

Last weekend I made a trip to a local grocery store in Dallas, Texas, and was inspired by their delicious dairy free pesto sauce and cauliflower rice. Cauliflower rice is a great alternative for those who are grain-free to satisfy that “carb craving”. This dish is perfect for a light lunch or dinner.

Nutritional Benefits: Cauliflower is an excellent source of antioxidants including vitamin c, manganese, beta-carotene, and quercetin (as well as many others) which help to decrease oxidative stress in our cells. These antioxidants also help to support our phase 1 and 2 detoxification pathways. Fiber found in cauliflower helps to further eliminate toxins from our body as well as keeps us full and satisfied.

Ingredients
Cauliflower Rice
  • 1 head cauliflower
  • 1 Tbsp coconut oil
  • pinch sea salt
Sauteed Ground Beef and Onions
  • 1 lb grass-fed ground beef
  • 1 large white onion diced
  • 1 Tbsp garlic minced
  • 1 Tbsp coconut oil
  • ground black pepper to taste
  • Dino Kale Pesto to taste

Cauliflower Rice
  1. Break apart cauliflower into large florets and place in food processor.
  2. Process until cauliflower is completely broken down into rice-sized granules.
  3. Warm a tablespoon of coconut oil in a large skillet over low-medium heat.
  4. Place riced cauliflower into skillet, sprinkle with salt, and cook until tender.
Sauteed Ground Beef and Onions
  1. Warm a tablespoon of coconut oil in a large skillet over medium heat.
  2. In the skillet, add ground beef, garlic, black pepper, and onion.
  3. Cook until beef is crumbly and onions are tender.
  4. Add cauliflower rice and  Dino Kale Pesto to the skillet. Mix thoroughly and serve warm.
