Ingredients

  • 1 lb brussels sprouts stems removed
  • 1/2 cup fresh cherries pitted and sliced
  • 1/2 Tbsp coconut oil plus more for greasing
  • 1/4 tsp sea salt
  • 1/4 cup pecans (optional, avoid on the Autoimmune Solution protocol)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Grease a baking dish with coconut oil.
  3. Cut brussels sprouts in half and mix with cherries, oil, and salt.
  4. Roast 15-20 minutes depending on desired crispiness. Add pecans if desired.
