This is one of my favorite “go to” salads- easy to make and very nutritious! I normally cook chicken in bulk on the weekend and store it in my refrigerator so that I can use it throughout the week as an ingredient for salads and scrambles, such as this one.

Olives and extra virgin olive oil contain monounsaturated fatty acids which decrease inflammation and LDL (“bad”) cholesterol and raise HDL (“good”) cholesterol, promoting cardiovascular health.
