Soup base ingredients
  • 1 1 can coconut milk
  • 1 240 cup ml water
  • 6 kaffir lime leaves crumpled
  • 12 12 half-inch slices ginger root
  • 1 14.787 tbsp ml ground turmeric
  • lime zest from 1/2 lime
  • 4 thai chilies insides removed
  • 1 stalk of lemon grass cut into 3 inch chunks
Other ingredients
  • 1 raw chicken breast
  • 1 sweet potato
  • 1 stalk of broccoli
  • lime juice from 1 lime
  • sea salt to taste

Instructions

  1. Combine base ingredients in a medium pot, and bring to a boil.
  2. Reduce to medium and add uncooked chicken pieces. Add sweet potato chunks and broccoli.
  3. Continue cooking until chicken is thoroughly cooked and no longer pink in the middle. Add the juice from one lime. Salt to taste.
