A friend gave me a similar recipe for Paleo breaded chicken thighs. I did some experimenting and took out the butter and egg for all of us on The Myers Way®. These Crispy Baked Organic Chicken Legs were a hit!

  • 1 1/2 681 lbs g chicken thigh or legs, bone-in, skin on (about 5 legs)
  • 3/4 180 cups ml coconut milk
  • 1/2 120 cups ml coconut flour
  • 1 14.787 tbsp ml garlic powder
  • 1 4.929 tsp ml onion powder
  • 1 4.929 tsp ml ground thyme
  • 1/4 1.23225 tsp ml cinnamon
  • 1/2 2.4645 tsp ml sea salt
  • 1/2 2.4645 tsp ml ground black pepper
  • coconut oil for greasing

  1. Preheat oven to 375 degrees F.
  2. Place chicken thighs in glass dish and drizzle with coconut milk. Turn chicken to coat entirely with coconut milk and let sit.
  3. In a medium sized bowl, mix coconut flour, garlic powder, onion powder, thyme, cinnamon, pepper, and salt.  
  4. Grease large rimmed baking dish with coconut oil. Dip chicken in flour mixture to coat both sides and place on greased baking dish.
  5. Bake for about 45-50 minutes until chicken is cooked through.
