Dairy-Free Triple Berry Parfaits

My Triple Berry Parfaits are a delicious, nutrient-dense treat that makes a great breakfast, snack, or even a healthy dessert. In this dairy-free parfait recipe, coconut yogurt is layered with fresh berries and toasted coconut flakes for a gluten-free parfait with satisfying textures and great taste. The coconut flakes give the parfait cups a nice crunch and add even more coconut flavor.

These Dairy-Free Triple Berry Parfaits can also be prepared in advance for a quick breakfast on the go. You’ll also want to keep this recipe in mind when you’re in the mood for dessert. This parfait is a great way to support your body with healthy, sweet, and delicious whole foods thanks to all the nutritious ingredients.

Coconut yogurt

Coconut yogurt is made from coconut milk or coconut cream. It is a great vegan, dairy-free yogurt alternative that is loaded with probiotics, which are great for your gut health. 

You can find a recipe for a homemade version here, however, it’s also sold in stores. Look for coconut yogurt that has live and active cultures as one of the ingredients. Make sure to get unsweetened coconut yogurt to avoid added sweeteners and refined sugars. If you tolerate honey or have reintroduced it, you can add a drizzle over your coconut yogurt to add a touch of natural sweetness to your parfait.

Berries

Berries are one of the healthiest fruits available. They’re full of antioxidants including anthocyanins, ellagic acid, and resveratrol thanks to their rich color. These antioxidants help protect your body from oxidative damage, protect your cells, and may even reduce the risk of developing certain diseases. Berries are lower in sugar compared to other fruits, and they provide exceptional amounts of fiber to help with digestion and keep you full.

In this parfait recipe, I used strawberries, blackberries, and blueberries. You can also use raspberries, mulberries, elderberries, or currants if you want to use what’s available locally or add some variety to your diet. All of these berries are extremely healthy, and by including various berries in your parfaits, you can get a wider variety of nutrients.

Look for organic berries that are in season and available locally for the most nutrient-rich parfait ingredients.

Gluten-free parfait topping

For these parfait cups, I use toasted coconut flakes for a crispy, gluten-free topping. Coconut flakes are shredded coconut meat, which is high in manganese, copper, iron, and selenium. Manganese is good for bone health and metabolism. Copper and iron help form red blood cells, and selenium is an important antioxidant that helps your skin cells and boosts your metabolism. 

Toasted coconut flakes are very easy to make. You start with organic, unsweetened coconut flakes or unsweetened, shredded coconut, then add them to a skillet and toast over medium-heat until they turn golden brown. There is no need to add oil to the skillet — just stir the flakes frequently to prevent them from burning. Once they turn golden brown, remove the coconut from heat and allow to cool. They will become crispy as they cool down. The aroma from the toasted coconut flakes is so delicious, you may not be able to resist eating them plain!

How to Make Your Dairy-Free Triple Berry Parfaits

These Triple Berry Parfaits are so easy to make. They’re the perfect meal, snack, or dessert to prepare when you don’t have a lot of time on your hands.

First, you want to toast your coconut flakes. I don’t recommend skipping this step, because toasting the coconut is what adds some crunch and texture to your parfait without any wheat or grain-based ingredients. It also brings out a nice, roasted, nutty flavor from the coconut.

Heat an un-greased skillet over medium-heat and add your coconut flakes to the pan. You want to move the coconut flakes frequently to prevent them from burning. Once they’ve achieved a nice golden-brown color, remove them from the pan and let them cool. You’ll find that they get crispier as they cool down.

Then, you simply assemble your parfait cups. I recommend using small mason jars or glass containers to store and serve your parfait cups.

Start with a layer of coconut milk yogurt, top with berries, then coconut flakes. Repeat until the the container is full. See? Easy. Enjoy these parfaits any time of the day!

Ingredients

  • 1 cup plain coconut yogurt
  • 1/4 cup coconut flakes unsweetened, toasted
  • 1 cup fresh berries

Instructions

  1. In a large dry skillet, toast the coconut flakes over medium heat, stirring frequently for 3-5 minutes, or until golden-brown and toasted. Remove from heat and allow to cool. You can store toasted coconut flakes in a closed container at room temperature - it will stay crispy for several days.
  2. Assemble the parfait cups by layering the coconut yogurt, berries, and toasted coconut flakes. Serve immediately or keep refrigerated for up to 24 hours.
