One SCFA in particular, butyrate, is especially important in protecting the brain, is an overall anti-carcinogenic, and is extremely anti-inflammatory!

Ingredients
- 1 plantain
- 1 cup 240.00 ml coconut oil
- 1 tsp 4.93 ml cinnamon
- sea salt
Instructions
- Cut plantain horizontally in 3 inch cubes.
- Heat oil in pan then add plantains. Brown on both sides.
- Take plantains off heat and mash down flat like the shape of a pancake.
- Re-fry in oil on both sides until crispy. Top with cinnamon and sea salt. Serve warm.
