Ginger Coconut Summer Salad with Organic Chicken

Ingredients
- 8 cups 1920.00 ml mixed greens thinly sliced
- 1 chicken breast cooked, thinly sliced
- 1/2 mango thinly sliced
- 1/4 red onion thinly sliced
- 1/2 inch 1.27 cm ginger root peeled and minced
- 1 Tbsp 14.79 ml unsweetened coconut flakes
- 2 Tbsp 29.57 ml lemon juice
- 2 tsp 9.86 ml lemon zest
- 2 Tbsp 29.57 ml extra virgin olive oil
- 1/2 tsp 2.46 ml sea salt to taste
- 1/2 tsp 2.46 ml ground black pepper to taste
Instructions
- Arrange greens on serving plate or bowl. Scatter chicken, mango and onion slices on top.
- In a small bowl whisk together ginger, coconut flakes, lemon juice, lemon zest, oil, salt and pepper. Drizzle over salad and serve.
