Ginger Coconut Summer Salad with Organic Chicken
Ingredients
- 6-8 cups mixed greens thinly sliced
- 1 cooked chicken breast thinly sliced
- 1/2 mango thinly sliced
- 1/4 red onion thinly sliced
- 1/2 inch ginger root peeled and minced
- 1 Tbsp unsweetened coconut flakes
- 2 Tbsp lemon juice
- 2 tsp lemon zest
- 2 Tbsp extra virgin olive oil
- 1 pinch sea salt
- 1 pinch ground black pepper
Instructions
- Arrange greens on serving plate or bowl. Scatter chicken, mango and onion slices on top.
- In a small bowl whisk together ginger, coconut flakes, lemon juice, lemon zest, oil, salt and pepper. Drizzle over salad and serve.
