Hawaiian Chicken Kabobs

This simple yet crowd-pleasing recipe will win everyone over at your 4th of July cookout! The pineapple marinade used in this recipe adds a citrusy summer flair to every bite!

Plus, you can easily double or triple this recipe to accommodate your guests because I know everyone will be going for seconds! You can also swap out any of the vegetables or even use a different protein option, rather than chicken.

Ingredients
Marinade
  • 3 tbsp pineapple juice
  • 1 tbsp honey (optional)
  • 3 tbsp bone broth
  • 1 tbsp apple cider vinegar
  • 1 tbsp sesame oil
  • 1 tbsp fresh ginger diced
  • 1 tbsp garlic minced
Kabobs
  • 1 pound chicken cubed
  • 1 cup fresh pineapple squares
  • 1 zucchini
  • 1 squash
  • 1 red onion cut into 1 inch pieces
  • skewers

Instructions
  1. Combine marinade ingredients. Place chicken into a large dish or bowl and cover with marinade. Allow to marinate in refrigerator for 2-3 hours or overnight.
  2. In the meantime, soak skewers in water (if wooden).
  3. Place veggies and chicken on skewers in whatever order you chose.
  4. Cook on grill until chicken is cooked through.

*** Don’t have a grill? These work just as great in the oven! Just cook at 375F for 20-30 minutes.
