This fresh, minty Shamrock Shake is just what you need for St. Patrick’s Day, or anytime you’re craving a refreshing shake! This healthy shamrock shake is dairy-free, sugar-free, free from dyes and artificial colors, and is suitable for the AIP diet.

Ingredients for a healthy shamrock shake

This healthy shamrock shake has a few secret ingredients to make it naturally green, naturally sweet, and naturally minty: it is made with fresh spinach leaves for color, fresh mint leaves for color and a fresh mint flavor, frozen banana for sweetness and to thicken the shake, and a drop of peppermint essential oil for an extra fresh peppermint flavor. In addition, it has avocado, coconut milk, and vanilla extract to make it taste creamy like it is made with a scoop of vanilla ice cream.

Blend it together with some ice, and enjoy! 

The shake tastes rich and delicious, but it is loaded with nutrients: spinach contains iron and vitamin K, which are important for healthy blood clotting and for preventing anemia. Avocado contains healthy oils, which are good for the heart. Banana is loaded with fiber and potassium, which are important for keeping the digestive system healthy and reducing blood pressure. Coconut milk contains electrolytes, which the body needs to maintain normal muscle, nerve, and heart function.

Not only is this shake delicious, but it will keep you full longer thanks to all the fiber and healthy fats in the shake, unlike the fast food shake that is just empty calories. 

If you are able to tolerate cacao nibs in your diet, you can sprinkle some on your shake before serving for extra nutrients, flavor, and a little crunch.

  • 2 banana peeled, chopped into thirds, and frozen
  • 2 cups baby spinach
  • 1 cup fresh mint leaves
  • 1 cup coconut milk
  • 1/2 avocado
  • 2 cups ice
  • 1 tsp vanilla extract
  • 1 drop peppermint essential oil

Instructions

  1. Combine all the ingredients in a blender and process until smooth. Serve immediately.
