These mint brownies truly are a decadent dessert that just happen to be paleo and egg-free! They are rich and fudgy, and to top it all off have a delightful touch of mint! Plus, I’ve added collagen and paleo protein for a pure, clean source of amino acids that that pack in gut-repairing benefits! This is a more wholesome version of everyone’s favorite chocolatey treat.

I am certain they will satisfy any chocolate lover’s craving.

Instructions
  1. Preheat oven to 350 degrees F. Grease an 8x8 baking pan. Combine dry ingredients, except gelatin. In a separate bowl, combine banana, coconut oil, apple cider vinegar, and vanilla extract.
  2. Combine gelatin with 1/4 cup water and allow to bloom 2-3 minutes. Whisk into wet ingredients. Once combined, add this to dry ingredients.
  3. Pour mixture into baking pan. Bake for 25-30 minutes or until cooked through.
