This trail mix is simple to prepare, makes for easy storage so that you can snack while on-the-go and keep your blood sugar stable. I suggest making large batches of this trail mix to keep in your purse, car, and pantry.

Coconut chips provide much needed fat for brain and metabolism, the fruits add sweetness and minerals, and the Tiger Nuts add a savory element and a pleasant crunch even though they are technically a tuber, not a tree nut.

  • 1 cup unsweetened coconut chips toasted (not coconut flakes)
  • 1 cup dehydrated mango dehydrated no dried
  • 1 cup unsweetened banana chips
  • 1 cup tigernuts preferably peeled
  • 1 cup dried apples organic and un-sulphured
