Organic Greens Salad with Root Veggie “Croutons”


  • 4 cups mixed organic greens
  • 1/2 cup root veggie chips
  • 6 ounces cooked chicken cubed
  • 1/4 red onion sliced
  • 1/2 cucumber sliced
  • 1/4 cup raw pumpkin seeds
  • 1 small avocado diced
  • 1/4 cup black olives sliced
  • 1 Tbsp apple cider vinegar
  • 4 Tbsp extra virgin olive oil
  • 1/4 tsp ground black pepper
  • 1 pinch sea salt




  1. In a large salad bowl toss greens, veggie chips, chicken, red onion, cucumber, pumpkin seeds, olives, and avocado.
  2. In a small bowl whisk together apple cider vinegar, oil, pepper, and salt.  
  3. Drizzle dressing over salad and serve.
