Organic Greens Salad with Root Veggie “Croutons”

Ingredients
- 4 cups 960.00 ml mixed greens
- 1/2 cup 120.00 ml root veggie chips
- 6 ounces 177.44 ml chicken cubed
- 1/4 red onion cooked, sliced
- 1/2 cucumber sliced
- 1/4 cup 60.00 ml pumpkin seeds
- 1 avocado diced
- 1/4 cup 60.00 ml black olives sliced
- 1 Tbsp 14.79 ml apple cider vinegar
- 4 Tbsp 59.15 ml extra virgin olive oil
- 1/4 tsp 1.23 ml ground black pepper
- 1/2 tsp 2.46 ml sea salt to taste
Instructions
- In a large salad bowl toss greens, veggie chips, chicken, red onion, cucumber, pumpkin seeds, olives, and avocado.
- In a small bowl whisk together apple cider vinegar, oil, pepper, and salt.
- Drizzle dressing over salad and serve.
