Organic Oven-Roasted Whole Carrots

Ingredients

  • 16 carrot
  • 2 Tbsp coconut oil or animal fat
  • 1/4 tsp sea salt
  • cinnamon (optional, to taste)

Instructions

  1. Preheat oven to 375 degrees F.
  2. Scrub carrots with water and a vegetable scrubber.
  3. Place carrots in a large oven-safe glass dish. Drizzle with olive oil to coat all carrots. Sprinkle with salt.
  4. Roast carrots for 45-60 minutes until soft and golden. Option to sprinkle with cinnamon before serving.
