Paleo Ranch Dressing

Ingredients

  • 1 can unsweetened coconut milk
  • 1/3 cup raw sunflower seeds
  • juice from 1 lemon
  • 1/2 Tbsp onion powder
  • 1 Tbsp apple cider vinegar
  • 1 clove garlic
  • 2 Tbsp dried chives
  • 2 Tbsp fresh parsley finely chopped

Instructions

  1. Combine all ingredients, except chives and parsley, in a high-powered blender and blend for 2 minutes until smooth.
  2. Transfer mixture to resealable jar. Stir in chives and parsley. Cover and refrigerate overnight.
  3. For a thicker texture, refrigerate your can of coconut milk overnight before using.
