  • 1 240 cup ml pecans
  • 1 240 cup ml cashews
  • 2 480 cups ml Medjool dates pitted and chopped
  • 1/3 80 cups ml cocoa powder (plus more for dusting)
  • 1 1/2 7.3935 tsp ml peppermint extract
  • 1/4 1.23225 tsp ml sea salt
  • 1/4 60 cups ml unsweetened shredded coconut

  1. Line baking sheet or pan with parchment paper.
  2. In a food processor, pulse the cashews until finely chopped. Add the pecans, dates, cocoa powder, and salt and pulse until dough comes together.
  3. Sprinkle in the peppermint extract and pulse again to combine.
  4. Using a tablespoon, roll the dough into tight balls and dust in cocoa powder and coconut flakes.
  5. Place dough balls on parchment paper and place them in the refrigerator for 20-30 minutes. Once brownie bites have had a chance to set, remove from refrigerator and enjoy!
