I had a lot of cucumbers in my fridge which inspired this Quick & Crunchy Cucumber Salad.  It takes less than 5 minutes and is great for lunch or a side salad.

  • 1/2 cucumber peeled and cubed
  • 1/2 avocado cubed
  • 3/4 180 cups ml chicken cooked, cubed or shredded
  • 1/4 mango cubed
  • 1/4 60 cups ml walnuts
  • 1 4.929 tsp ml lemon juice
  • 1/2 2.4645 tsp ml sea salt to taste
