Skillet Squash and Greens




  • 1 butternut squash peeled and cubed
  • 1 bunch swiss chard chopped
  • 3 cups arugula
  • 1 zucchini diced
  • 2 cloves garlic minced
  • 1 onion diced
  • 2 Tbsp olive oil
  • sea salt to taste
  • ground black pepper to taste


  1. Place cubed squash into a pot and cover with water. Boil until squash is tender but not mushy (approximately 5-7 minutes).
  2. Drain the butternut squash, and place in skillet with olive oil, zucchini, garlic, onions, arugula, and Swiss chard.
  3. Saute until the chard is wilted. Season with salt and pepper as desired.
